Healthy Recipe: Zesty Shrimp with Orange Salad

Serve this protein-packed shrimp recipe alongside a bright and flavorful orange salad for a healthy lunch or quick weeknight meal.

For the Zesty Shrimp Saute
1 t granulated garlic
¼ t red pepper flakes (optional)
Pinch ground black pepper
¼ t salt
1 t unsalted butter or olive oil
1 lb. shrimp, peeled and deveined (about 16 large shrimp)
2 T lemon juice
½ t lemon zest

1. Preheat a sauté pan over medium heat. Add garlic, pepper flakes, pepper, and salt. Toast for 30 seconds until fragrant.
2. Add the butter and allow to melt.
3. Add shrimp and cook 1-2 minutes each side until cooked through.
4. Turn off the heat.
5. Add lemon juice and zest and swirl the pan until the shrimp are evenly coated.
6. Serve immediately or refrigerate for 2 hours and serve cold.

For the Orange Salad
4 oranges
¼ cup pitted black olives, halved
½ t paprika
2 T lemon juice
1 T olive oil
1 ½ T finely chopped Italian parsley

1. Peel oranges removing as much pith as possible.
2. Cut orange crosswise into around 6 rounds and arrange on plate in overlapping slices.
3. Sprinkle the olives on the oranges.
4. In a jar, combine paprika, lemon juice, and olive oil.
5. Add chopped parsley and stir to combine.
6. Drizzle dressing over oranges and serve with additional parsley as a garnish.
