Vegan Avocado Pesto Ingredients
1 medium avocado
2 cups fresh spinach
cloves garlic, minced
2 Tbsp. lemon juice
¼ cup extra-virgin olive oil
¼ cup pine nuts
1 cup fresh basil
Salt, to taste
Ground black pepper, to taste
Method of Preparation
1. Place the avocado, spinach, garlic, lemon juice, olive oil, and pine nuts in a food processor, and process until smooth.
2. Add the basil and pulse a few more times.
3. Season with salt and pepper to taste.
4. Spoon into a small bowl or serve over desired pasta or vegetables.
