Turkey Meatballs with Cauliflower Fried Rice

These baked Turkey Meatballs are a healthy alternative to traditional meatballs. Serve them with Cauliflower Fried Rice for an easy weeknight meal!

For the Turkey Meatballs
Ingredients
1 lb. of extra-lean ground turkey
4 cloves garlic, minced
½ medium onion, minced
½ cup mushrooms, minced
1/3 of cup oat flour
2 T ground flax seeds (flax meal)
2 egg whites
1 t dried oregano
½ t dried thyme
½ t salt

Preparation
1. Preheat oven to 375 degrees.
2. In a large bowl combine turkey, garlic, onion, mushrooms, oat flour, flax seed meal, egg whites, oregano, thyme, and salt. Mix it all together with your hands or a spoon until everything is well combined.
3. Take about two tablespoons of meat mixture and form into a ball about the size of a golf ball. Place on a baking sheet sprayed with cooking spray or lined with parchment paper.
4. Bake for 15- 20 minutes.

For the Cauliflower Fried Rice
Ingredients
1 lb. bag of frozen riced cauliflower, thawed
1 bunch spring onions, chopped
1 tsp. ginger powder
1 Tbsp. oil (sesame oil gives the best flavor, but can use any other oil)
¼ tsp. salt

Preparation
1. Heat oil over heavy skillet on medium heat.
2. Add spring onions and sauté until slightly browned.
3. Add thawed cauliflower and sauté for 5-6 minutes.
4. Add salt and serve hot with turkey meatballs.
