Healthy Recipe: Sweet Chili Chicken with Cashews

The crunch of cashews and the sweetness of chicken come together in this Thai home favorite. Paired with a rice noodle salad of fresh herbs, these clean flavors work well when taste is diminished form cancer treatments.

INGREDIENTS

Culinary Comforts Version

1.5 lbs. chicken breasts, in strips
7 oz. unsalted cashews
2 Tbsp. olive oil
2 Tbsp. fish sauce
2 Tbsp. chili in soya
1-2 large dried chiles, broken
6 green onions, sliced

Amended Version

1.5 lbs. chicken breasts, in strips
1/2 oz. unsalted cashews
1/2 Tbsp. olive oil
1 Tbsp. fish sauce
2 Tbsp. chili in soya
1-2 large dried chiles, broken
6 green onions, sliced

METHOD

Marinate the chicken in the chili in soya, oil and fish sauce. Fry cashews and chili quickly to keep crisp; set aside. Flash fry chicken. Add green onions, cashew and chili mixture. Mix well and serve.

Pairs beautifully with Thai Noodle Salad.
