State of Slim – Stuffed Bell Peppers

1 lb. lean ground beef (96% lean)
1 cup brown rice
1 small yellow onion, diced
1 whole egg
1 cup salsa
1/4 to 1/2 cup fresh cut up parsley
Salt and pepper to taste
4-5 green bell peppers (depends on size)

1. Mix all ingredients (bell peppers excluded).
2. Cut top of bell peppers and clean out thoroughly.
3. Stuff the bell peppers with filling ingredients, cover with tops of bell pepper.
4. Bake at 350 for 60 minutes.
