This granola is a great way to top yogurt for breakfast or to take on the go for a quick snack throughout the day!
Rolled Oats: 2 cups
Egg Whites: 3 Tbsp
Raw Almonds: ½ cup
Walden Farms Pancake Syrup (sugar-free): ¼ cup
Vanilla Extract: 1 tsp
Ground Cinnamon: 1 Tbsp (more or less to taste)
- Preheat oven to 350F degrees and line a sheet pan with parchment paper or a silpat, then spray lightly with pan spray.
- In a bowl, combine all ingredients, coating the oats with egg whites as much as possible. Spread mixture on the sheet tray evenly.
- Bake granola for 10 minutes, then take out and chop up with a metal spoon or bench scraper. Bake again for another 8 minutes, or until granola is golden brown.
- Cool completely and serve, or store for later.
Yield: 3 cups or 6 servings
