Pea and Cilantro Soup

This simple pea soup recipe boasts a beautiful bright green color and packs a serious flavor punch! It’s a perfect, comforting recipe, and the best part? It can be served hot or cold!

Pea and Cilantro Soup Ingredients

6 Servings

2 T olive oil
6 green onions, sliced
12 small potatoes, diced
1 small red chili or chili flakes (optional)
2 clove garlic, crushed
4 ½ cups chicken or vegetable stock
1 lb. bag of frozen peas
Handful of cilantro
1 t sugar
1 T lime juice
¾ cup low-fat natural yogurt

Method of Preparation

1. Heat the oil in a saucepan over medium heat, and add the potato, green onions, chili, and garlic. Sauté for around 3-5 minutes until translucent.
2. Add the stock and bring to a boil, simmer for 10 minutes or until the potato is soft.
3. Add the peas and cook for another 5 minutes.
4. Pour into a blender, add the cilantro, sugar, lime juice and yogurt. Blend until smooth.
5. Serve warm or chilled.
