Ingredients

Spring rolls:
6 oz Mahi-Mahi, grilled, sliced into strips
2 – 12” round Asian rice paper
¼ cup shredded carrots
¼ cup shredded savoy cabbage
½ bell pepper, cut into strips
¼ cup sliced cucumber
¼ cup minced scallions
6 mint leaves
1 t soy sauce, low sodium

Dipping sauce:
¼ cup minced scallions
2 Tablespoons soy sauce, low sodium
1 Tablespoon fresh lime juice
1 teaspoon Sriracha sauce

Instructions

1. Toss vegetables and Mahi-Mahi together with 1 teaspoon of soy sauce.
2. Dip rice paper into warm water for 30 seconds or until softened.
3. Distribute Mahi and vegetable mixture into the middle of rice paper.
4. Roll tightly into spring rolls and chill.
5. Whisk ingredients of dipping sauce together. Optional: serve rolls over a bed of baby spinach
