Healthy Holiday Nibbles

Chili-Salt Edamame

Ingredients
14 oz. (1 3/4 cup) of frozen edamame in pods, defrosted
Olive oil spray
1/2 t kosher salt
1/2 t chili flakes

Preparation
1. Preheat oven to 375 degrees.
2. Place edamame in a large bowl and toss with olive oil, salt, and chili flakes.
3. Spread onto a baking sheet and bake for 5 minutes.
4. Take baking sheet out of the oven and shake around. Place back in the oven for another 5 minutes or until glossy and the salt and chili are sticking to the pods.
5. To eat, slip the edamame out of the pods. Store in a sealed container in the fridge for up to one week.

Italian Festive Almonds

Ingredients
1 3/4 cups (14 oz.) raw almonds
Olive oil spray
3 T fresh, chopped rosemary
1/2 t kosher salt
1/2 t chili flakes

Preparation
1. Preheat oven to 350 degrees.
2. Place almonds in a large bowl and toss with the olive oil, salt, rosemary, and chili flakes. Spread onto a baking sheet and bake for 5 minutes.
3. Take the baking sheet out of the oven and shake it around. Place back in the oven for another 5 minutes, and watch it closely.
4. Almonds should be light golden color and have a dried appearance.
5. Keep in a sealed container for up to 2 weeks.
