Chef Paolo Neville has developed a deep respect for the simplicity of fresh produce and a connection to local farmers and ranchers. Chef Paolo has been involved with many award-winning restaurants. As part owner and executive chef of Bistro Elaia, Chef Neville uses his talents to create a unique, fresh menu that fits perfectly with the philosophy of the Anschutz Health and Wellness Center. His desire to prepare healthy, great tasting foods is evident in the dishes available through Bistro Elaia’s healthy counter, as well as their extensive gourmet-catering menu.
